Ingredients
  • 8 tablespoons sugar

  • 1/2 cup water


  • 1/4 cup orange juice


  • 3 cups fresh pineapple (about 1 small) cut into chunks

  • 2 teaspoons vanilla paste or 1 teaspoon vanilla extract*

Cooking time: 10 minutes active 5 hrs inactive Serving: 8 (4 oz servings)
  1. Bring sugar, water, and orange juice to a boil, stirring to dissolve sugar.
  2. Remove from heat and let simple syrup cool 10 minutes.
  3. Add simple syrup to the pineapple chunks and blend in blender or with an immersion blender till smooth.
  4. Strain and chill sorbet base in refrigerator for at least 3 hours.
  5. When sorbet base is ready, stir and process according to ice cream mixer directions. *I love this flavor combination with a little vanilla or cinnamon to bring some earthiness back to the mix and tone down the acidity.
